- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease.
- Season eggplant slices with salt, pepper, and garlic powder. Let them rest on paper towels for 10-15 minutes to draw out moisture. Pat dry.
- Whisk the egg in a shallow bowl. In another bowl, mix almond flour and parmesan.
- Dip each eggplant slice into egg, then coat evenly with almond flour mixture. Place on prepared baking sheet.
- Drizzle olive oil or spray cooking spray over slices. Bake 20 minutes, then flip and bake another 20 minutes until golden and tender.
