  1. Place eggs in the bottom of a tall jar or tumbler suitable for an immersion blender.
  2. Add olive oil, lemon juice, salt, pepper, and mustard or garlic.
  3. Insert immersion blender blade just above the egg yolks at the bottom.
  4. Blend without moving the blender until the mixture thickens and emulsifies (about 30-60 seconds).
  5. If mixture is too thick, add a small amount of water or vinegar and blend again.
  6. Adjust seasoning to taste.
  7. Store in the refrigerator for up to one week.
