This keto chaffle sandwich is a crispy, cheesy, low-carb alternative to traditional bread. Made with almond flour, eggs, and cheese, it’s the perfect base for your favorite fillings like bacon, lettuce, eggs, or avocado. Delicious, portable, and completely gluten-free.

  1. Preheat your mini waffle maker.
  2. In a small bowl, whisk egg, almond flour, baking powder, garlic powder, and mozzarella cheese until well combined.
  3. Pour half of the mixture into the waffle iron and cook for 4-5 minutes or until golden brown.
  4. Repeat with the remaining batter to make two chaffles.
  5. For extra crispiness, sprinkle a little cheese directly on the waffle iron before adding the batter.
  6. Spread mayo on each chaffle. Layer bacon, lettuce, and tomato. Add optional avocado or fried egg for extra richness.
  7. Top with the second chaffle and press gently. Serve warm.
