These homemade gluten-free graham crackers are crisp, lightly sweetened, and full of warm honey and cinnamon flavor. Perfect for snacking, s’mores, pie crusts, or dunking into milk.

  1. Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together gluten-free flour, brown sugar, baking soda, salt, and cinnamon.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in honey, milk, and vanilla extract until dough forms.
  5. Roll dough between two sheets of parchment paper to about ⅛-inch thick.
  6. Transfer rolled dough to baking sheet. Score into squares or rectangles with a knife or pizza cutter.
  7. Prick each cracker with a fork to give them the classic graham cracker look.
  8. Bake for 12–15 minutes, or until golden brown and crisp.
  9. Cool completely before breaking into squares. Store in an airtight container.
