In a bowl, mix strawberries with ¼ cup sugar. Let sit for 15–20 minutes, then blend or mash lightly for a chunky puree.
In a separate bowl, whisk together the cream, milk, remaining sugar, vanilla, and salt until sugar dissolves.
Add the strawberry mixture to the cream base. Stir well and refrigerate for at least 2 hours (or overnight).
With Ice Cream Maker: Pour into machine and churn as per manufacturer’s instructions.
Without Machine: Pour into a freezer-safe container, stir every 30 minutes for 2–3 hours to break ice crystals.
Once firm, scoop into bowls or cones. Store leftovers in an airtight container.
