  1. In a saucepan over low heat, melt the butter into the heavy cream. In a separate bowl, whisk the egg yolks.
  2. Slowly pour a bit of the warm cream into the yolks while whisking. Then pour yolk mixture back into the saucepan.
  3. Stir constantly over low heat until thickened (about 8–10 minutes). Do not boil. Remove from heat and let cool.
  4. Refrigerate the custard for at least 2 hours until cold.
  5. With Ice Cream Maker: Churn according to instructions.
  6. Without Machine: Freeze in a container, stirring every 30 minutes for 2–3 hours to prevent ice crystals.
  7. Scoop and enjoy! Optionally top with crispy bits of bacon or jerky for a crunchy finish.
