This traditional stoved (or stove-top) chicken is cooked low and slow with potatoes, onions, and carrots in a savory broth. The result? Fall-off-the-bone chicken in a rich, homey stew. Perfect for a cozy dinner.

Ingredients

Directions

  1. Brown the Chicken
  2. Heat oil in a large deep skillet or Dutch oven over medium heat. Season chicken with salt and pepper. Brown on both sides (about 5 minutes per side). Remove and set aside.
  3. Sauté the Aromatics
  4. In the same pot, sauté sliced onions and garlic until soft and golden, about 5 minutes.
  5. Layer and Simmer
  6. Return chicken to the pot. Add carrots and potatoes around the chicken. Sprinkle with thyme and add bay leaf. Pour in the chicken broth.
  7. Cook Gently
  8. Cover with a tight lid and simmer gently on low heat for 1 hour, or until the chicken is fully cooked and vegetables are tender.
  9. Serve and Enjoy
  10. Discard bay leaf, garnish with chopped parsley, and serve hot with crusty bread or over rice if desired.
