This spicy chicken sandwich is ultra crispy, perfectly seasoned, and layered with spicy mayo, crunchy pickles, and a toasted buttery bun. It’s better than fast food—and you control the heat!

- Marinate the Chicken
- In a bowl, combine buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and pepper. Add chicken and marinate for at least 1 hour (or overnight for best flavor).
- Make the Spicy Mayo
- Mix all mayo ingredients in a bowl. Adjust heat level to your liking. Refrigerate until ready to use.
- Prepare the Coating
- Mix flour, cornstarch, and all spices in a bowl.
- Dredge the Chicken
- Remove chicken from marinade, let excess drip off. Coat thoroughly in the flour mix. For extra crunch, dip back in marinade, then flour again.
- Fry Until Crispy
- Heat oil to 350°F (175°C) and fry chicken 4–6 minutes per side, until golden and internal temp hits 165°F (74°C).
- Toast the Buns
- Spread butter on inside of brioche buns and toast in a pan until golden.
- Assemble the Sandwich
- Spread spicy mayo on both bun halves, add pickles, then the crispy chicken. Serve immediately.
