This spicy chicken sandwich is ultra crispy, perfectly seasoned, and layered with spicy mayo, crunchy pickles, and a toasted buttery bun. It’s better than fast food—and you control the heat!

Ingredients

  1. Marinate the Chicken
  2. In a bowl, combine buttermilk, hot sauce, garlic powder, onion powder, paprika, salt, and pepper. Add chicken and marinate for at least 1 hour (or overnight for best flavor).
  3. Make the Spicy Mayo
  4. Mix all mayo ingredients in a bowl. Adjust heat level to your liking. Refrigerate until ready to use.
  5. Prepare the Coating
  6. Mix flour, cornstarch, and all spices in a bowl.
  7. Dredge the Chicken
  8. Remove chicken from marinade, let excess drip off. Coat thoroughly in the flour mix. For extra crunch, dip back in marinade, then flour again.
  9. Fry Until Crispy
  10. Heat oil to 350°F (175°C) and fry chicken 4–6 minutes per side, until golden and internal temp hits 165°F (74°C).
  11. Toast the Buns
  12. Spread butter on inside of brioche buns and toast in a pan until golden.
  13. Assemble the Sandwich
  14. Spread spicy mayo on both bun halves, add pickles, then the crispy chicken. Serve immediately.
