  2. Set Instant Pot to Sauté. Add olive oil, then sauté onion, garlic, carrots, and celery for about 3–4 minutes.
  3. Add Ingredients:
  4. Add chicken breasts, thyme, bay leaf, salt, pepper, and chicken broth.
  5. Pressure Cook:
  6. Seal the lid and set to High Pressure for 10 minutes. Allow 10-minute natural release, then quick release the remaining pressure.
  7. Shred Chicken:
  8. Remove the chicken, shred it with two forks, and return to the pot.
  9. Add Noodles:
  10. Set Instant Pot to Sauté again. Add egg noodles and cook uncovered for 6–8 minutes until tender.
  11. Finish and Serve:
  12. Taste and adjust seasoning. Serve warm with parsley garnish.
