In a large pot, heat olive oil and cook sausage until browned. Remove excess fat.
Add onion, carrots, celery, and garlic. Sauté for 5–7 minutes until vegetables are soft.
Stir in tomatoes, lentils, chicken broth, oregano, basil, salt, and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes, or until lentils are tender.
Taste and adjust seasoning. Serve hot, garnished with parsley or Parmesan if desired.
