This vibrant Indian-style purple sweet potato chaat offers crispy roasted cubes tossed in tangy, spicy chutneys and topped with roasted peanuts, sesame seeds, and pomegranate arils. A colorful, flavorful street food perfect as a snack or appetizer.

  1. Preheat air fryer to 375°F (190°C) for 2 minutes.
  2. Toss diced purple sweet potatoes in ghee/oil until evenly coated.
  3. Cook potatoes in the air fryer for 10–12 minutes, shaking halfway through, until crispy.
  4. Transfer cooked potatoes to a bowl. Sprinkle black pepper, cumin powder, mango powder, and salt; toss gently.
  5. Drizzle with cilantro and tamarind chutneys.
