Cherokee fry bread is a classic Native American recipe: soft, chewy flatbread fried until puffed and golden. Serve with honey, jam, or toppings, or use as a base for Indian tacos.

Ingredients

Directions

  1. In a mixing bowl, combine flour, baking powder, and salt. Whisk together.
  2. Slowly add warm water, stirring until dough just comes together (you may not need all water; dough should be soft but not sticky).
  3. Gently knead on a floured board until smooth and elastic, but do not overwork.
  4. Divide into 4–8 balls. Flatten each into ¼-inch thick discs or strips, poking a small hole/slit in the center for even frying.
  5. Heat 1–2 inches oil in a deep pan to 350–370°F (175–188°C).
  6. Carefully lay bread in hot oil, away from yourself. Fry until golden on both sides, flipping once (about 1–2 minutes per side).
  7. Drain on paper towels. Serve warm, topped as desired.
