- Soak beans overnight if using dry, then drain. Pressure cook until tender, about 15 min (or use canned beans, rinsed).
- Heat oil in a large pot. Add cumin seeds, bay leaves, and cinnamon. Sauté 30 sec until fragrant.
- Add chopped onion, ginger, and garlic. Sauté until onions are golden brown.
- Add tomato, cover, and cook until mushy.
- Stir in cooked beans, turmeric, oregano, cumin powder, coriander powder, chili powder, and salt. Mix well.
- Add 1 cup water and coconut milk if using. Simmer 10–15 minutes, adjusting thickness as needed.
- Sprinkle cilantro and serve hot with rice or roti.
