This hearty Indian curry features black turtle beans simmered with onions, tomatoes, ginger, garlic, and warming spices. Creamy and satisfying, it’s naturally vegan and loaded with plant protein. Serve with rice or flatbread for comfort food at its best.

  1. Soak beans overnight if using dry, then drain. Pressure cook until tender, about 15 min (or use canned beans, rinsed).
  2. Heat oil in a large pot. Add cumin seeds, bay leaves, and cinnamon. Sauté 30 sec until fragrant.
  3. Add chopped onion, ginger, and garlic. Sauté until onions are golden brown.
  4. Add tomato, cover, and cook until mushy.
  5. Stir in cooked beans, turmeric, oregano, cumin powder, coriander powder, chili powder, and salt. Mix well.
  6. Add 1 cup water and coconut milk if using. Simmer 10–15 minutes, adjusting thickness as needed.
  7. Sprinkle cilantro and serve hot with rice or roti.
