This ice cream Christmas cake combines rich vanilla ice cream, festive dried fruits, and a crunchy cookie base. A no-bake treat that’s both fun and elegant for your holiday table.

  1. Make the Base:
  2. Crush the biscuits in a food processor or with a rolling pin.
  3. Mix in melted butter until it resembles wet sand.
  4. Press into the base of a lined round springform pan.
  5. Freeze while you prepare the filling.
  6. Prepare the Filling:
  7. In a large bowl, mix softened ice cream with dried fruits, spices, orange zest, nuts, and glace cherries.
  8. Stir gently until combined but not melted.
  9. Assemble the Cake:
  10. Spoon the ice cream mixture over the chilled base and smooth the top.
  11. Cover with cling wrap and freeze for at least 6 hours or overnight.
  12. Decorate & Serve:
  13. Unmould the cake and drizzle with melted chocolate or decorate with festive toppings.
  14. Slice and serve immediately with whipped cream if desired.
