This ice cream Christmas cake combines rich vanilla ice cream, festive dried fruits, and a crunchy cookie base. A no-bake treat that’s both fun and elegant for your holiday table.

- Make the Base:
- Crush the biscuits in a food processor or with a rolling pin.
- Mix in melted butter until it resembles wet sand.
- Press into the base of a lined round springform pan.
- Freeze while you prepare the filling.
- Prepare the Filling:
- In a large bowl, mix softened ice cream with dried fruits, spices, orange zest, nuts, and glace cherries.
- Stir gently until combined but not melted.
- Assemble the Cake:
- Spoon the ice cream mixture over the chilled base and smooth the top.
- Cover with cling wrap and freeze for at least 6 hours or overnight.
- Decorate & Serve:
- Unmould the cake and drizzle with melted chocolate or decorate with festive toppings.
- Slice and serve immediately with whipped cream if desired.
