Rinse rice under cold water until the water runs clear; set aside.
Heat olive oil in a large skillet or pot over medium heat. Add onion and garlic, sauté until softened.
Add ground lamb and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Stir in cumin, cinnamon, paprika, salt, and pepper; cook 1–2 minutes until fragrant.
Add rinsed rice, mix well with the lamb and spices.
Pour in broth, bring to a boil, then reduce to low heat, cover, and simmer 18–20 minutes until rice is tender.
Fluff with a fork, garnish with parsley and toasted pine nuts if desired.
