Make the Batter
In a bowl, whisk eggs and sugar until light and fluffy. Stir in melted butter, vanilla, milk, and cardamom. Add the gluten-free flour and cornstarch and mix until smooth.
Preheat the Iron
Heat a krumkake iron (electric or stovetop) to medium heat.
Cook the Cookies
Drop about 1 tbsp of batter onto the iron and cook for 30–60 seconds or until lightly golden.
Roll Quickly
Remove carefully and immediately roll around a wooden cone or dowel while hot. Let cool to set.
