This gluten-free krumkake is a light, crispy Norwegian waffle cookie traditionally made during the holidays. It’s cooked on a krumkake iron and rolled into delicate cones. This gluten-free version stays true to the original—thin, buttery, and perfect for filling with whipped cream or eating plain.

  2. In a bowl, whisk eggs and sugar until light and fluffy. Stir in melted butter, vanilla, milk, and cardamom. Add the gluten-free flour and cornstarch and mix until smooth.
  3. Preheat the Iron
  4. Heat a krumkake iron (electric or stovetop) to medium heat.
  5. Cook the Cookies
  6. Drop about 1 tbsp of batter onto the iron and cook for 30–60 seconds or until lightly golden.
  7. Roll Quickly
  8. Remove carefully and immediately roll around a wooden cone or dowel while hot. Let cool to set.
  9. Serve or Fill
  10. Serve plain, dusted with powdered sugar, or filled with whipped cream and berries.
