These dairy-free cookies are made with plant-based butter and dairy-free chocolate chips. They’re chewy in the middle, slightly crisp on the edges, and perfect for snacking or sharing.

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together the dairy-free butter, brown sugar, and white sugar until smooth.
  3. Add the egg and vanilla extract; mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture. Mix until just combined.
  6. Fold in the dairy-free chocolate chips.
  7. Scoop 1½ tbsp portions onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes until edges are golden. The centers may look slightly soft — that’s perfect!
  9. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
