  2. Pat lamb tenderloins dry with paper towels. Season generously with salt and pepper.
  3. In a small bowl, combine olive oil, minced garlic, rosemary, and thyme. Rub mixture over the lamb.
  4. Heat a skillet (oven-safe) over medium-high heat. Add a drizzle of olive oil and sear the lamb on all sides (2–3 minutes per side) until browned.
  5. Transfer skillet to the oven and roast for 12–15 minutes, or until internal temperature reaches 135°F (57°C) for medium-rare or desired doneness.
  6. Remove lamb from oven, cover loosely with foil, and rest for 5–10 minutes.
  7. Slice into medallions and serve with roasted vegetables, mashed potatoes, or a fresh salad.
