These juicy, pan-seared chicken thighs are smothered in a rich garlic butter sauce and cooked until crispy outside and tender inside. Low in carbs, high in flavor — perfect for keto.

  1. Season Chicken:
  2. Pat the chicken thighs dry and season both sides with salt, pepper, paprika, and garlic powder.
  3. Sear the Chicken:
  4. Heat olive oil in a skillet over medium-high heat. Place chicken skin-side down and sear for 5–6 minutes until golden. Flip and cook for another 5–6 minutes. Remove and set aside.
  5. Make the Sauce:
  6. Reduce heat to medium. Add butter and minced garlic. Sauté for 1–2 minutes. Add thyme and chicken broth. Let simmer for 2 minutes.
  7. Combine:
  8. Return the chicken to the skillet. Spoon sauce over thighs. Cover and simmer on low for 10–15 minutes or until fully cooked (internal temp 165°F).
  9. Serve:
  10. Garnish with fresh parsley and serve with steamed broccoli, cauliflower mash, or zucchini noodles.
