  2. Add cauliflower and cook 5 minutes until lightly browned but still firm.
  3. Stir in ginger, garlic, and tikka masala paste; cook 30 seconds to 1 minute until fragrant.
  4. Add chopped tomatoes, water/broth, potatoes, and brown sugar. Bring to boil, then cover and simmer 20-25 minutes until vegetables are tender.
  5. Stir in cream or coconut milk and chickpeas. Simmer 5 minutes more until heated through. Season with salt and pepper.
  6. Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
