This Carnivore-Style Delmarva BBQ Chicken delivers smoky, tangy flavor with zero carbs. Inspired by the Eastern Shore of the Delmarva Peninsula, this version sticks to the carnivore diet by skipping sugar and focusing on bold seasoning, buttery tang, and juicy grilled chicken.

  1. Pat chicken dry and season all over with salt, pepper, paprika, garlic, and onion powder.
  2. In a small bowl, whisk together vinegar, melted butter, and optional mustard or cayenne.
  3. Preheat your grill to medium heat (~350°F/175°C). Place chicken skin-side down. Grill for 35–45 minutes, turning and basting every 10 minutes with the vinegar-butter mixture.
  4. Chicken is done when internal temp reaches 165°F (74°C) and skin is crispy. Let rest 5 minutes before serving.
