Broasted chicken combines the juiciness of pressure-cooked chicken with the crispiness of deep frying. This homemade version replicates the famous broaster-style chicken using a pressure fryer or traditional deep-frying technique for similar results.

  1. Marinate the Chicken:
  2. In a bowl, mix buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add chicken pieces and marinate in the fridge for at least 4 hours or overnight.
  3. Prepare the Coating:
  4. In another bowl, combine flour, cornstarch, baking powder, salt, pepper, and remaining spices.
  5. Dredge the Chicken:
  6. Remove chicken from marinade (don’t wipe it off). Coat thoroughly in the flour mixture. Press coating onto each piece.
  7. Cook (Pressure Frying Method):
  8. Heat oil in a pressure fryer to 350°F (175°C).
  9. Place coated chicken in fryer basket (do not overcrowd).
  10. Lock lid and cook for 10–12 minutes or until internal temp reaches 165°F (74°C).
  11. Release pressure safely, then drain chicken on a wire rack.

  13. Stovetop Deep Frying Method:
  14. Heat oil in a deep fryer or heavy pot to 325°F (160°C).
  15. Fry chicken in batches for 12–15 minutes, turning occasionally, until crispy and golden brown.
  16. Rest and Serve:
  17. Let chicken rest for 5 minutes before serving. Enjoy with fries, coleslaw, or your favorite dipping sauce.
