This one-pan creamy chicken thigh and mushroom dish is packed with flavor. Juicy chicken thighs are seared to perfection and simmered in a rich garlic mushroom cream sauce. Serve it over mashed potatoes, pasta, or rice for a satisfying meal.

  1. Season & Sear Chicken:
  2. Pat chicken thighs dry and season with salt, pepper, and paprika.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Sear chicken thighs (skin-side down first if using skin-on) for 5–6 minutes per side until golden. Remove and set aside.
  5. Sauté Mushrooms:
  6. In the same skillet, add butter.
  7. Add sliced mushrooms and sauté for 5–6 minutes until browned.
  8. Add minced garlic and cook for 1 minute.
  9. Make Cream Sauce:
  10. Pour in chicken broth and scrape up the brown bits.
  11. Stir in heavy cream and thyme. Bring to a gentle simmer.
  12. Return chicken to the pan, reduce heat to low, and simmer uncovered for 15–20 minutes or until chicken is cooked through and sauce thickens.
  13. Garnish and Serve:
  14. Sprinkle with fresh parsley and serve hot.
