Season & Sear Chicken:
Pat chicken thighs dry and season with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken thighs (skin-side down first if using skin-on) for 5–6 minutes per side until golden. Remove and set aside.
Sauté Mushrooms:
In the same skillet, add butter.
Add sliced mushrooms and sauté for 5–6 minutes until browned.
Add minced garlic and cook for 1 minute.
Make Cream Sauce:
Pour in chicken broth and scrape up the brown bits.
Stir in heavy cream and thyme. Bring to a gentle simmer.
Return chicken to the pan, reduce heat to low, and simmer uncovered for 15–20 minutes or until chicken is cooked through and sauce thickens.
