Cook chicken: Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken 5–7 minutes per side or until golden and cooked through. Remove and set aside.
Sauté mushrooms: In the same skillet, add butter and sauté mushrooms until browned (about 5 minutes).
Add garlic & spinach: Stir in minced garlic and cook for 1 minute. Add spinach and cook until wilted.
Make sauce: Pour in heavy cream and Parmesan. Simmer 3–4 minutes until sauce thickens slightly.
Return chicken: Slice cooked chicken and return to skillet. Simmer everything together for another 2–3 minutes.
