In a large skillet, heat olive oil and cook chicken until browned. Remove and set aside.
In the same pan, sauté onions and garlic until soft. Add carrots, green beans, and broccoli. Cook for 5–6 minutes.
Stir in flour and cook for 1 minute. Slowly whisk in chicken broth and milk until sauce thickens.
Add chicken back to the pan along with peas, thyme, pepper, and salt. Mix well.
Transfer to a greased casserole dish. Sprinkle with cheese if using.
Mix breadcrumbs with melted butter and sprinkle over the top.
Bake uncovered for 25–30 minutes or until bubbly and golden on top.
Let cool slightly and serve warm.
