Combine marinade ingredients for riblets in a bowl and whisk until sugar dissolves. Add riblets and garlic cloves, marinate at least 2 hours or overnight.
Preheat air fryer to 360°F (182°C).
Place riblets and garlic cloves in the air fryer basket, avoiding excess marinade liquid.
Air fry for 6 minutes, shake basket, then cook 6 more minutes until nicely browned and cooked through.
Meanwhile, mix all dipping sauce ingredients in a bowl.
