Wash, dry, and peel your carrots if desired. Slice into 1-inch pieces at an angle.
Toss carrots in a bowl with olive oil, thyme or parsley, garlic, salt, and pepper until well coated.
Add carrots to the air fryer basket in a single layer.
Air fry at 375–400°F (190–200°C) for 15–18 minutes, shaking the basket halfway through to promote even cooking.
Carrots are done when fork-tender with crisp edges.
Optional: Finish with a squeeze of lemon or drizzle of maple syrup. Garnish with fresh herbs and serve warm.
