  2. In one bowl, whisk eggs. In another, mix pork rinds, 1/2 cup parmesan, garlic powder, onion powder, salt, and pepper.
  3. Dip each chicken piece into egg, then coat thoroughly in pork rind mixture; press to stick.
  4. Spray air fryer basket. Lay chicken fillets in a single layer (batches may be needed). Spray tops lightly.
  5. Air fry 10 minutes, flip, then spoon marinara and sprinkle mozzarella and a little extra parmesan on each piece.
  6. Air fry another 5–6 minutes until chicken is cooked (165ºF/74ºC) and cheese melts.
  7. Garnish with basil or parsley. Serve hot—pairs well with zoodles or salad.
