In a large bowl, whisk together flour, brown sugar, baking powder, salt, and apple pie spice.
In another bowl, whisk eggs, milk, and vanilla extract until combined.
Add wet ingredients to dry ingredients; stir gently just until combined. Fold in diced apples.
Drop ¼ cup portions of batter into the basket, spacing out fritters for airflow.
Cook for 8 minutes, then flip and cook for another 4-5 minutes until golden and cooked through.
