  1. Mix flaxseed or chia seed with water in a small bowl; set aside to thicken (~5 minutes).
  2. In a large bowl, cream vegan butter and sugar until fluffy. Add flax egg, milk, vanilla, and almond extract; mix to combine.
  3. In a separate bowl, whisk flour, baking powder, and salt. Slowly add dry ingredients to wet ingredients, mixing until dough forms. If dough is sticky, chill 30 minutes.
  4. Roll dough between two sheets of parchment to ¼-inch thickness. Cut shapes with cookie cutters.
  5. Place cookies on lined baking sheet. Chill 15 minutes.
  6. Preheat oven to 350°F (175°C). Bake cookies 10-12 minutes until edges are slightly golden. Cool on baking sheet 5 minutes then transfer to wire rack to cool completely.
  7. Decorate as desired once cooled.
