These vegan pizzelle are crisp, sweet, and lightly flavored with vanilla. Perfect for the holidays or special occasions, they’re made without eggs or dairy but still deliver the traditional Italian wafer cookie texture.

  1. Preheat your pizzelle maker according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a separate bowl, whisk the plant-based milk, sugar, melted vegan butter, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry, mixing until smooth. The batter should be thick but spoonable.
  5. Lightly grease the pizzelle maker with oil spray.
  6. Drop about 1 tablespoon of batter onto the center of each pizzelle plate and close the lid.
  7. Cook for about 30–40 seconds, or until golden brown.
  8. Carefully remove the pizzelle and cool on a wire rack. They will crisp up as they cool.
  9. Serve plain or dust with powdered sugar.
