This gentle vegan stew is designed for those with GERD (acid reflux). It uses mild, low-acid vegetables and seasonings that won’t trigger heartburn while still being hearty and flavorful.

  1. Rinse lentils well and set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced carrots, zucchini, and celery. Sauté for 5 minutes until softened.
  3. Add rinsed lentils, water (or low-sodium vegetable broth if tolerated), and potatoes. Bring to a boil.
  4. Reduce heat and simmer for 20–25 minutes until lentils are tender.
  5. Stir in spinach during the last 3 minutes of cooking until wilted.
  6. Season lightly with salt and fresh herbs (avoid spicy seasonings).
  7. Serve warm.
