Swedish Apple Cake is a cozy, cinnamon-kissed cake filled with sliced apples and a delicate, buttery batter. It’s perfect served warm with vanilla sauce, whipped cream, or ice cream.

  1. 1. Preheat Oven & Prepare Pan
  2. Preheat oven to 350°F (175°C).
  3. Grease and flour a 9-inch springform pan or round cake pan.
  4. 2. Prepare the Apples
  5. Peel, core, and thinly slice:
  6. 2–3 medium apples (Granny Smith, Honeycrisp, or other firm apples)
  7. Toss with:
  8. 1 tablespoon lemon juice
  9. 1 teaspoon ground cinnamon
  10. 1 tablespoon sugar
  11. Set aside.
  12. 3. Make the Batter
  13. In a bowl, beat:
  14. 1/2 cup (113g) unsalted butter, softened
  15. 2/3 cup (135g) granulated sugar
  16. until light and fluffy.
  17. Add:
  18. 2 large eggs, one at a time
  19. 1 teaspoon vanilla extract
  20. In another bowl, mix:
  21. 1 1/4 cups (160g) all-purpose flour
  22. 1 1/2 teaspoons baking powder
  23. Pinch of salt
  24. Gradually fold the dry ingredients into the wet mixture, alternating with:
  25. 1/4 cup (60ml) milk
  26. until smooth.
  27. 4. Assemble the Cake
  28. Pour the batter into the prepared pan and smooth the top.
  29. Arrange the apple slices on top in a circular pattern.
  30. Sprinkle with a bit more cinnamon and sugar (optional).
  31. 5. Bake
  32. Bake for 40–50 minutes, or until a toothpick comes out clean and the top is golden.
  33. Let cool slightly before serving.
