- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper.
- In a bowl, whisk together mashed bananas, melted butter, sugar, eggs, and vanilla. In another bowl, mix flour, baking soda, salt, and cinnamon. Combine wet and dry ingredients until just blended.
- Pour half the batter into the loaf pan. Sprinkle with half the cinnamon-sugar topping. Add remaining batter and finish with the rest of the topping.
- Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if browning too quickly.
