These Enoki Beef Rolls are a mouthwatering Japanese-inspired appetizer made with tender, thinly sliced beef wrapped around crunchy enoki mushrooms, then pan-seared and glazed in a savory-sweet sauce. Perfect as a side dish, appetizer, or part of a bento lunch!

  1. Prepare enoki mushrooms: Trim off the root end of the enoki mushrooms and separate them into small bundles.
  2. Wrap with beef: Take one slice of beef and wrap it tightly around a small bundle of enoki mushrooms. Repeat until all are wrapped.
  3. Make the sauce: In a bowl, mix soy sauce, mirin, sake (or water), and sugar. Set aside.
  4. Sear the rolls: Heat oil in a skillet over medium-high heat. Place the rolls seam-side down and cook for 2–3 minutes on each side until browned.
  5. Glaze and cook: Pour the sauce into the pan and let it simmer for 2–3 minutes, spooning the sauce over the rolls until it thickens and coats them.
  6. Serve: Transfer to a plate, garnish with sesame seeds and chopped green onions, and serve warm.
