These prune cupcakes are soft, tender, and spiced just right. The mashed prunes add natural sweetness and keep the cupcakes moist without being heavy — a perfect nostalgic dessert!

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a small saucepan, simmer prunes with water for 8–10 minutes until soft. Mash into a puree and let cool.
  3. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat eggs with oil, brown sugar, and vanilla.
  5. Stir in mashed prunes, then gently mix in dry ingredients until just combined.
  6. Spoon batter into cupcake liners (about ¾ full).
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. Cool completely, then frost if desired.
