Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream the butter and powdered sugar until light and fluffy.
Add vanilla extract and mix to combine.
Stir in flour and salt gradually until a dough forms.
Fold in finely chopped pecans or walnuts.
Roll dough into 1-inch balls and place on the baking sheet about 2 inches apart.
Bake for 12 minutes or until the bottoms are lightly golden (tops should not brown).
Let cool slightly, then roll warm cookies in powdered sugar.
Once fully cooled, roll them in powdered sugar again for a snowy finish.
