These homemade Lorna Doone Cookies are a buttery, melt-in-your-mouth shortbread treat that tastes just like the iconic store-bought version! Made with just a few simple pantry ingredients, they’re crisp on the edges, soft in the center, and perfect with coffee or tea.

  2. Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Cream Butter & Sugar
  4. In a large bowl, cream butter and powdered sugar until light and fluffy (2–3 minutes).
  5. Add Vanilla & Flour
  6. Mix in vanilla extract and salt. Gradually add flour and mix until a soft dough forms.
  7. Shape the Cookies
  8. Roll dough into a rectangle about ½ inch thick. Cut into small rectangles (about 1½ x 2 inches) and place on baking sheet.
  9. Bake
  10. Bake for 15–18 minutes or until the edges just begin to turn golden. Let cool on a wire rack.
  11. Serve or Store
  12. Enjoy immediately or store in an airtight container for up to 1 week.
