In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
Add flour, salt, and oil. Mix until dough forms, then knead for 8–10 minutes until smooth.
Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.
Punch down dough and divide into 8 equal pieces. Roll each piece into a ball.
Shape into Kaiser rolls by flattening slightly and pressing a Kaiser stamp or slicing with a sharp knife in a star pattern.
Place rolls on a baking sheet lined with parchment. Cover and let rise again for 30–45 minutes.
Preheat oven to 400°F (200°C). Optionally, brush rolls with egg wash and sprinkle with sesame or poppy seeds.
Bake for 18–20 minutes or until golden brown and hollow-sounding when tapped.
Cool on a wire rack and enjoy fresh or store in an airtight container.
