Jimbo’s sugar cookies are the kind that disappear before they’ve even cooled — soft, chewy centers with a golden edge and a hint of vanilla. Perfect for birthdays, holidays, or any “just because” cookie craving.

  1. Whisk flour, baking soda, baking powder, and salt in a medium bowl.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy (about 2 minutes).
  3. Beat in eggs one at a time, then add vanilla.
  4. Gradually add the dry mixture until just combined — do not overmix.
  5. Wrap dough and chill for at least 1 hour for better shape and texture.
  6. Preheat oven to 350°F (175°C).
  7. Roll dough into 1-inch balls and place on a parchment-lined baking sheet.
  8. Flatten slightly with the bottom of a glass for uniform thickness.
  9. Bake 8–10 minutes, until edges are lightly golden.
  10. Cool on racks… if you can wait that long.
