In a large bowl, dissolve yeast and sugar in warm water. Let it sit 5–10 minutes until foamy.
Mix in oil, salt, and about half the flour. Stir until combined.
Gradually add remaining flour, kneading until a soft, elastic dough forms (about 8 minutes).
Place dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
Punch down dough, divide into 4 equal pieces, and shape into sub rolls about 6–8 inches long.
Place rolls on a parchment-lined baking sheet, cover loosely, and let rise 20–25 minutes.
Brush tops with water or egg wash for a golden crust.
Bake at 375°F (190°C) for 18–20 minutes until lightly golden.
