- Bring a large pot of salted water to a boil. Add gnocchi and cook until they float (2–3 min). Drain and set aside.
- In a large nonstick skillet, cook bacon until crisp. Remove and set aside on paper towels. Wipe pan clean if needed.
- Heat oil or butter in the same skillet over medium. Add zucchini and cook 2–3 minutes until just soft. Stir in peas and scallions, sauté 1 minute.
- Add cooked gnocchi, reduce heat to low, and stir in cream cheese until a creamy sauce forms. Add a splash of reserved pasta water if it looks thick.
- Fold in cooked bacon (if using) and half the parmesan. Toss to coat, season with salt and pepper.
- Serve in bowls, topped with remaining parmesan and fresh herbs.
