This HelloFresh-inspired gnocchi recipe features pillowy potato gnocchi tossed with crisp zucchini, sweet green peas, bacon bits, and a creamy parmesan sauce. Finished with fresh herbs and plenty of cheese, it’s a comforting and satisfying vegetarian (or add bacon for extra richness) weeknight dinner.

  1. Bring a large pot of salted water to a boil. Add gnocchi and cook until they float (2–3 min). Drain and set aside.
  2. In a large nonstick skillet, cook bacon until crisp. Remove and set aside on paper towels. Wipe pan clean if needed.
  3. Heat oil or butter in the same skillet over medium. Add zucchini and cook 2–3 minutes until just soft. Stir in peas and scallions, sauté 1 minute.
  4. Add cooked gnocchi, reduce heat to low, and stir in cream cheese until a creamy sauce forms. Add a splash of reserved pasta water if it looks thick.
  5. Fold in cooked bacon (if using) and half the parmesan. Toss to coat, season with salt and pepper.
  6. Serve in bowls, topped with remaining parmesan and fresh herbs.
