Rattlesnake Pasta is a flavorful Tex-Mex-inspired pasta dish packed with spicy chicken, creamy Cajun sauce, and colorful peppers. Despite the name, there's no snake—just a kick of heat that “bites” back! It’s a favorite comfort food at restaurants like J. Alexander’s or local steakhouses.

  1. Boil pasta in salted water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning and paprika. In a large skillet, heat oil and cook chicken until browned and cooked through. Remove and set aside.
  3. In the same pan, sauté bell peppers and onions until soft. Add garlic and cook for 1 minute.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan and pepper jack cheese until melted and smooth.
  5. Add the cooked pasta and chicken to the sauce. Toss to coat. Season with salt, pepper, and optional red pepper flakes for extra heat.
  6. Garnish with parsley or extra cheese and serve immediately.
