Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, crumble the marzipan into small pieces.
Add sugar and egg white, then mix until smooth and paste-like.
Stir in almond extract for extra flavor.
Scoop 1-inch balls of dough and roll in powdered sugar if desired.
Place cookies 2 inches apart on prepared baking sheets.
Gently flatten each cookie with your fingers or the bottom of a glass.
Bake 12–15 minutes, until edges are just golden.
Cool completely before serving — they firm up as they cool.
