These marzipan cookies are little bites of almond heaven — crisp on the outside, soft and chewy in the center. Perfect with tea, coffee, or as a sweet gift that looks as elegant as it tastes.

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, crumble the marzipan into small pieces.
  3. Add sugar and egg white, then mix until smooth and paste-like.
  4. Stir in almond extract for extra flavor.
  5. Scoop 1-inch balls of dough and roll in powdered sugar if desired.
  6. Place cookies 2 inches apart on prepared baking sheets.
  7. Gently flatten each cookie with your fingers or the bottom of a glass.
  8. Bake 12–15 minutes, until edges are just golden.
  9. Cool completely before serving — they firm up as they cool.
