If making hummus from scratch, prepare it first.
Grate beetroot finely using a box grater.
Smash avocado with a fork, season with salt and pepper.
Toast bread slices lightly. Spread hummus on one slice.
Layer cucumber, tomato slices, seasoned with salt and pepper.
Add alfalfa sprouts, grated beetroot, and butter lettuce leaf.
Spread mashed avocado on the other slice of bread. Close sandwich and cut in half.
