This fresh vegan sandwich is packed with vibrant vegetables and creamy hummus, layered on hearty whole grain sourdough. It’s perfect for a quick lunch or light dinner, bursting with crunch, flavor, and plant-based protein.

  1. If making hummus from scratch, prepare it first.
  2. Grate beetroot finely using a box grater.
  3. Smash avocado with a fork, season with salt and pepper.
  4. Toast bread slices lightly. Spread hummus on one slice.
  5. Layer cucumber, tomato slices, seasoned with salt and pepper.
  6. Add alfalfa sprouts, grated beetroot, and butter lettuce leaf.
