- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In another bowl, combine almond milk, oil, vinegar, and vanilla. Mix well.
- Pour wet ingredients into dry and stir until just combined (do not overmix).
- Fill each liner about ¾ full and bake for 18–20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely before frosting.
- For the frosting: beat dairy-free butter until fluffy. Add powdered sugar gradually, then almond milk and vanilla. Mix until smooth.
