Cook Pasta:
Cook pasta in salted water according to package directions. Drain and set aside.
Brown the Brats:
In a large skillet, heat olive oil over medium heat. Add sliced or crumbled bratwurst and cook until browned and cooked through, about 7–8 minutes. Remove and set aside.
Sauté Vegetables:
In the same pan, add onion and garlic. Sauté until soft and fragrant, about 3 minutes.
Make the Sauce:
Pour in chicken broth and let it simmer for 2 minutes. Then add heavy cream, Italian seasoning, salt, and pepper. Bring to a gentle simmer and cook until slightly thickened (5 minutes).
Combine Everything:
Add the cooked pasta and bratwurst back into the skillet. Toss to coat. Stir in spinach if using, and cook just until wilted. Mix in Parmesan cheese.
Serve:
Garnish with parsley and more Parmesan if desired. Serve hot!
