This country apple fritter bread captures the delicious flavors of apple fritters in a moist, tender quick bread. Packed with tender apple chunks, warm cinnamon and ginger spice, and finished with a sweet glaze, it’s perfect for breakfast or a cozy snack.

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5 inch loaf pan.
  2. In a medium bowl, mix peeled, chopped apples with brown sugar, cinnamon, and ginger. Set aside to macerate.
  3. In a large bowl, whisk together egg, granulated sugar, vegetable oil, sour cream, and vanilla until smooth.
  4. In another bowl, whisk flour, baking soda, and salt; gradually mix into wet ingredients until just combined.
  5. Fold most of the apple mixture into the batter, reserving some for topping.
  6. Pour batter into loaf pan and sprinkle reserved apple mixture on top.
  7. Bake 50-60 minutes until a toothpick inserted in center comes out clean.
  8. Cool in pan 10 minutes before transferring to a wire rack.
  9. Drizzle with a glaze made from powdered sugar, vanilla, and milk before serving.
