This homemade version of Costco’s popular quinoa salad is a vibrant and refreshing mix of quinoa, lentils, vegetables, and a light citrus dressing. It’s nutrient-rich, gluten-free, and perfect as a side or light meal.

Cook Quinoa & Lentils:
Rinse quinoa and cook it in 2 cups water for 15 minutes. Cook lentils separately until tender. Let both cool completely.
Chop Veggies:
Finely dice the cucumber, tomatoes, red bell pepper, and parsley.
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
Combine Ingredients:
In a large bowl, mix quinoa, lentils, chopped veggies, and dressing. Stir well.
Chill & Serve:
Refrigerate for 1–2 hours to allow flavors to meld. Serve cold.
