These cinnamon sugar cookies are soft in the center, slightly crisp on the edges, and coated in a sparkly cinnamon-sugar mixture. They’re perfect with coffee, tea, or as a holiday treat.

  1. 1. Preheat Oven & Prep Pans
  2. Preheat oven to 350°F (175°C).
  3. Line baking sheets with parchment paper.
  4. 2. Make Cinnamon Sugar Coating
  5. In a small bowl, mix:
  6. 1/4 cup (50g) granulated sugar
  7. 1 ½ tsp ground cinnamon
  8. Set aside.
  9. 3. Make the Dough
  10. In a large bowl, beat:
  11. 1 cup (226g) unsalted butter, softened
  12. 1 cup (200g) granulated sugar
  13. 1/2 cup (100g) brown sugar
  14. until light and fluffy (2–3 minutes).
  15. Add:
  16. 2 large eggs
  17. 2 tsp vanilla extract
  18. Mix until smooth.
  19. In another bowl, whisk:
  20. 2 3/4 cups (345g) all-purpose flour
  21. 1 tsp baking soda
  22. 1/2 tsp baking powder
  23. 1/2 tsp salt
  24. 2 tsp ground cinnamon
  25. Gradually add dry ingredients to the wet mixture. Mix until combined (do not overmix).
  26. 4. Shape & Roll
  27. Scoop dough into 1-inch balls.
  28. Roll each ball in the cinnamon sugar coating.
  29. Place on baking sheet about 2 inches apart.
  30. 5. Bake
  31. Bake for 10–12 minutes, or until edges are lightly golden.
  32. Let cool on the pan for 2 minutes, then transfer to a wire rack.
