1. Preheat Oven & Prep Pans
Preheat oven to 350°F (175°C).
Line baking sheets with parchment paper.
2. Make Cinnamon Sugar Coating
In a small bowl, mix:
1/4 cup (50g) granulated sugar
1 ½ tsp ground cinnamon
Set aside.
3. Make the Dough
In a large bowl, beat:
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
1/2 cup (100g) brown sugar
until light and fluffy (2–3 minutes).
Add:
2 large eggs
2 tsp vanilla extract
Mix until smooth.
In another bowl, whisk:
2 3/4 cups (345g) all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
Gradually add dry ingredients to the wet mixture. Mix until combined (do not overmix).
4. Shape & Roll
Scoop dough into 1-inch balls.
Roll each ball in the cinnamon sugar coating.
Place on baking sheet about 2 inches apart.
5. Bake
Bake for 10–12 minutes, or until edges are lightly golden.
Let cool on the pan for 2 minutes, then transfer to a wire rack.
